Korean Tofu pancake (dubu jeon) are a great example of a delicious snack or side dish and that is easy to cook!A nd is a great option if you want to skip eating meat for a day :).  Today we will prepare together small tofu pancake with a lot of vegetables. Let’s get started!

Ingredients for 12 pancakes (2/3 people)

  • 1 pack of firm tofu (18 oz or 500 grams)
  • 1/2 cup of flour (60 grams)
  • 2 eggs
  • 1 small onion
  • 1 green pepper
  • 1 carrot
  • 1 small zucchini
  • 1 red chilli pepper
  • 2 teaspoons of salt

 

Instructions

  1. Rinse the tofu under running water and dry with a paper towel
  1. Chop all the vegetables (except the red chilli pepper)
  1. Mash the tofu using your hands
  1. Put the vegetables and the tofu in a large bowl

  1. Add the eggs, the flour and the salt. Mix everything well
  1. In a frying pan, heat 1 spoon of oil
  1. Pour a spoon of the mixture in the frying pan, flat it a bit using the spoon and make a circle shape

  1. Slice the chili pepper and add 1 slice on each pancake
  1. Fry on both sides until golden brown
  1. Serve the tofu pancake with the dipping sauce. For the dipping sauce: mix 2 spoon of soy sauce, 1 spoon of apple vinegar, 1 ts of chili powder and 1 ts of roasted sesame seeds
